I have been asked for a long time like “Aaron! How can I make rice cakes? Is there anything I can replace it?”

You know what? I wanted to lớn show you better substitutes for the rice cakes because making rice cakes will be so hard and take a lot of time. However, I was not satisfied with the substitutes, so I just ended up deciding lớn make 2 kinds of rice cakes for Tteokbokki.

LET’S MAKE RICE FLOUR FIRST!

For 2 types of rice cakes, we need rice flour.

Put 4 cups of short-grain rice in a bowl and wash it until the water drains clear. FYI, I did it 8 times. Soak the rice in clean water & put it in a fridge for at least 8 hours. Drain the water with a strainer. Get rid of the moisture with paper towels or a clean towel. If it is too wet, you can use a hairdryer. I am serious!Grind the rice with a coffee grinder or a food processor. địa chỉ cửa hàng the rice little by little. Sift the ground rice flour into a bowl. If there are too thick or large particles, grind them again until they can be sifted.

** You can store this in a freezer. Thus, I recommend you to lớn make it as much as possible. **

#1 Ssaltteok 쌀떡

The first one is called “Ssaltteok” which is made of rice flour only! It is a traditional rice cake và the texture will be chewier. However, if you boil too much, it gets mushy easily.

Put 2 cups of rice flour in a bowl.Add 1/2 teaspoon of salt into 1 cup of hot water và mix it. Pour it little by little into the bowl and mix it well with a spoon or a spatula.Cover this with plastic wrap và make some holes with a fork. Microwave it for 2 minutes. Take out the dough & mix it well. Microwave it for another minute. Repeat this step until it’s not too sticky. FYI, I did it 8 times.Spread a little bit of sesame oil or any cooking oil on the cutting board to lớn prevent the rice cakes from sticking khổng lồ it.Pound it with a bat. The longer you do, the chewier your rice cakes will be. Roll và cut it into the shape of Tteokbokki.

#2 Miltteok 밀떡


The second one is called “Miltteok” which contains wheat flour. It really goes well with the sauce of Tteokbokki and it does not get mushy easily. If you have ever had Tteokbokki from street vendors in Korea, I am pretty sure it was miltteok!

Put 220g of all-purpose flour, 75g of rice flour in a bowl and mix it. Add 1/2 teaspoon of salt into 150 ml of water and mix it. Pour it into the bowl little by little, và mix it.Pound the dough. Again, this step is the most important for chewy texture. I recommend you to use a stand mixer.Put this dough in a ziplock và rest it in the fridge for about 1 hour to lớn get a better texture. (optional)Spread a little bit of sesame oil or any cooking oil on the cutting board to lớn prevent the rice cakes from sticking to it.Place the dough on a cutting board and roll out the dough. Cut it into the rectangular shapes with a knife và make the shape of rice cakes. Boil it for 10 minutes and cool it down in ice water. If you want lớn keep it in a freezer, spread some sesame oil & store it.

#3 Tteokbokki Recipe

Ingredients: rice cakes, fish cake, onion, cabbage, green onion, Korean chili paste (gochujang,고추장), chili pepper flakes (gochugaru,고춧가루), sugar, minced garlic, đen pepper, chicken stock, boiled egg(1-2)

Cut everything into bite-size pieces.For the sauce, put 1 tablespoon of Korean chili paste, 2 tablespoons of chili pepper flakes, 1 tablespoon of sugar, một nửa tablespoon of minced garlic, some black pepper & 1 tablespoon of water in a bowl. địa chỉ cửa hàng 1 tablespoon of chicken stock and mix it. If you don’t have it, you can replace it with Dasida(Korean beef stock powder), soy sauce or oyster sauce . Pour 1 cup of water into a pan & boil it with the sauce. When it starts lớn boil, put everything all at once including the rice cakes.Put a boiled egg & keep stirring it.When the sauce gets thicker, it is done!
