This deep fried rice cake recipe is extra close to lớn my heart as it is the reminder of my nostalgic childhood memories of living in ShangHai. It is part of my childhood, a beloved street food that was just for a few cents at a time in Shanghai. It was such a warm treat in the freezing cold winter afternoon.

This salted glutinous rice cake doesn’t have fancy stuffing or pretty garnish. It is made with only a trio of ingredients, rice, salt and water ,which are cooked, shaped into blocks & deep fried. It is crispy outside & savory và soft inside. Simple yet tasty.

Note:

Use both short grain sticky rice và normal short grain rice with 1:1 ratio. Showroom a bit extra more water lớn make the rice more glutinous. Wait till the oil heated up then add the rice blocks so the crust forms quickly while keeping the inside moist. (dip a chopstick into the oil. If the oil starts steadily bubbling, then the oil is hot enough for frying.)

Hi Lei! Is there a Chinese name for this particular type of rice cake? I want to tìm kiếm for it in my area khổng lồ see if any restaurants serve anything similar. The closest I’ve been able lớn find is chao nian gao, but those seem to lớn be stir fried in sauce rather than plain deep fried ones. Hopefully you can help! Thank you!

Hi Melanie: It is called Chinese brown sugar rice cake. It usually is available in Chinese grocery stores around Chinese New Year time. I don’t think any Chinese restaurants have this dish. That is why I make it myself. They can be stored in the freezer, so worth the effort.
