If you have the chance to go near a durian, an exotic fruit largely produced in South-east Asia, I bet you will never forget your experience. Either you repulse it, or you love it, though there are people who take the middle stand.

Alfred Russel Wallace, a British naturalist and explorer described durian well :

60g whipping cream

Pinch of salt

2 tbsp icing sugar (or confectioner’s sugar / powdered sugar)

Ingredients for Dough

400g high protein flour

80g plain flour

8g yeast

20g custard powder

60g castor sugar

¼ tsp salt

2 eggs

40g butter




3. Add the eggs, lukewarm water, butter và milk into the flour ingredient in the mixing bowl.

4. Using the electric mixer, beat the mixed ingredients over low speed until you get a soft & smooth dough.

5. Cover the bowl with a damp tea towel & leave it aside for 45 minutes, or until the dough has doubled in size.

6. While waiting for the dough khổng lồ rise, mix all the filling ingredients together và stir well.

7. When the dough is ready, divide the dough into small, equal portions. The kích cỡ of each portion should be able to lớn fit into your cup cake baking tray. 8. For each portion of the dough, roll the dough flat, & scoop a teaspoon of durian filling onto the flattened dough & wrap the filling up neatly. Shape it into small balls và place it on a floured cup cake baking tray.

9. Cover with cling film, wrap and leave aside to lớn proof until the dough doubled in size.

10. When the dough has doubled in size, preheat the oven at 180 degree Celsius.

11. Remove the cling film wrap on the dough, & to create the durian thorn effect, use a pair of sharp scissors, snip the surface to make thorn-like effect.

12. Bake the dough in the preheated oven at 180 degree Celsius for 15 minutes or until the doughnut turn golden brown. Remove the doughnut from the over & brush the surface with a little milk immediately.

13. Serve with tea or coffee.

What is the difference between Whipping Cream and Whipped Cream ?

Whipping cream is cream that is ready to lớn be whipped. In another word, if you whip the whipping cream you buy from a shop, and whip it with an electric mixer, you get the whipped cream.

LOL, Carrie, if you have seen the real durian, you'd not say that it looks lượt thích lychee at all. Durian is much bigger, và thorny. :)

Love durians - và omg if I can find these donuts. Surely in NYC where we have everything - they must be out there somewhere. Would love khổng lồ try one or 10! But if not I can find the fresh or frozen durians here and can follow your recipe. Or maybe the markets will have frozen durian donuts. But they can't be a superb as your luscious recipe.

thank you, carcro. If you are curious about Durian, when you visit an Asian supermarket next time, ask for it, và you will brought khổng lồ the freezer section to lớn see the frozen durian. :) A frozen durian does not smell as strong as a fresh one.
