Fried Rice Flour Cake (Bot Chien)

Can you believe that I had my first Vietnamese Pan Fried Rice Cake(Bot Chien) only three years ago(2018)? I was grabbing art supplies while working for a wedding company in Vietnam. The art store was next to a college, và I would always see flocks of students huddling around these street food carts with their heads down. So I walked over there và gave my curiosity a try.

What is Bot Chien

Bot Chien, translated means fried flour. The texture is soft on the inside & crispy on the outside. It’s covered in shredded daikons and carrots. It comes with a sweet vinegar soy sauce that you can pour over or dip. And all the small rice cakes are covered in eggs và green onions. Most places will ask you if you want one or two eggs. I always get two.

Instruction On Pan Fried Rice Cake

Removing The Rice Flour Taste:Unless you are making your rice flour, you need to remove some of the rice taste/smell.Add 400g of rice flour and 400mL of water into a pitcher. Stir the set well & let the water settle. With an erasable marker, make an indication of where the water line is. địa chỉ another 400mL of water into the pitcher và stir well again. Let the mix sit for at least an hour. You will see that the water and rice set will separate over time. After an hour, you can pour as much water out without removing the rice flour. Fill the pitch back up with new water back to the water line and mix well.

After making this dish for the first time, I can see why this is so popular with students. It’s filling, cheap, and delicious!
