Easy rice cooker cake recipes: corn bread pudding pie

My first rice cooker cake is steamed banana chocolate cake. Then I experimented with a different recipe making moist chocolate cake that turned out to be a total flop as it was too dense. Today, using the steamed banana chocolate cake recipe, I tried making sweet corn cake. Was super nervous to xuất hiện the rice cooker when it was done as I was afraid it will be another failure but surprise, surprise, this is highly successful! It even has a very nice moist and buttery texture.

Using the same cup that I used for my first cake lớn get the measurement for this cake too. I super love this recipe as it calls for no kitchen scale và need no mixer. It is simple as simple can be.

Ingredients:

1 cup self-raising flour1/2 cup sugar 50 g butter 1 egg (lightly beaten) 60ml fresh milk 1 cup sweet corn

The sweet corn is basically a whole cob of corn, removed from the cob. Because I’m making this for my toddler, I chose khổng lồ blend it a little so it is not too chunky.

I blended the corn & milk together but not until too fine though just enough to lớn break the kernel.

After blending.

In a bowl, set butter and sugar together.

Add flour và egg. I added half a teaspoon of vanilla essence too.

Add corn milk and mix thoroughly.

Grease the rice cooker pot & pour in the cake mixture. Select CAKE and start baking. The rice cooker will stop at 45 minutes if I am not mistaken. If you are using a manual rice cooker, bake for 40 minutes.

The moment I opened the rice cooker cover, sweet và fragrant aroma of corn (and vanilla) filled my entire house! I am pleased khổng lồ see a beautiful fluffy cake in the pot.

I was even more pleased when I cut the cake to see moist and buttery cake greeting me. Finally it’s a success!

This boy who had been patiently waiting got impatient already at the first sniff of the fragrant cake. He kept tugging me for a slice và got it.
